If you have ever been to In'N'Out you know what "Animal Style" means. If not then here is a little info for you. You can go to In'N'Out and order a cheeseburger or french fries just like any other fast food establishment. But you can also order it "Animal Style" which will get whatever you order smothered in their secret sauce, cheese, and caramelized onions. It is the "Animal Style" french fries that inspired this Animal Style Potato Salad.

Ingredients:
2 lbs Teeny Tiny Potatoes (from Trader Joes)
2 1/2 TBLs Extra Virgin Olive Oil
2 TBLs Salt
1 tsp Pepper
1 1/2 tsp Onion Powder
1 Sweet Onion (diced)
1 TBLs Butter
3/4 cup Cheddar Cheese (shredded)
3/4 cup Thousand Island Dressing

My wife was craving In 'N' Out animal style fries but neither one of us wanted to drive to get them so naturally I came up with the version you see here, the "Animal Style Baked Potato".
